  • how we are making our money matter

    It’s the end of the year, which means Christmas shopping and budgeting for next year. For us, it also means that pretty soon we are going to be adding another child to our household and all the costs (*cough* daycare *cough*) that go with it. I have been thinking about money and finances a lot lately: how to save it, where to spend it, and how to make it matter. It’s a never-ending battle.

    We’ve been working on paring down our spending for awhile in anticipation of a drastic increase in expenses. Here are some things we’re doing to save:

    • Took a look at all of our recurring bills. Canceled or cut back on the non-necessary expenses (cable, subscriptions).
    • Changed phone plans to one that fits our lifestyle better.
    • Trying our best to be more energy-efficient with the thermostat and electric usage.
    • Set up separate savings accounts for annual expenses (like our HOA dues and Christmas shopping) that we pay into monthly so that we’re not hit with that all at once.
    • We hardly ever eat out, take advantage of lots of meals with family, and eat what we have in the house till we’re desperate (I’m still working on the whole cooking thing though…)
    • No “for fun” shopping, no trips to Target just to get out of the house, and I unsubscribed from all shopping emails and newsletters.
    • Begging for and borrowing hand-me-down toddler/baby clothes and supplies.
    • Set up a “change” jar. It might not seem like much but spare change can add up to pay for little splurges at the least!

    Another thing we’ve done is switch from our traditional bank to a local credit union. I was seriously going over our expenses with a fine-toothed comb, and I noticed that suddenly we were being charged a $10 monthly fee to have our checking account open. When we opened it we got a great deal with no fees and a high interest rate, but slowly all the benefits decreased until they were gone. After doing some research I realized that a credit union was the way to go! Here’s why:

    • They are non-profit! The members are the owners, so all money going in comes back to the members in the form of dividends, rebates, lower interest rates, etc.
    • They are part of the local community so putting your money there helps improve the local economy and infrastructure.
    • They have all the same services of big banks but with no fees and better rates.
    • No worry about convenience because most credit unions are part of a shared branching and ATM network.

    We seriously love our credit union and I’m actually mad we didn’t switch earlier!

    Hey let’s have a rare post about food from me, shall we? I always struggle with what to eat for breakfast. It has to be fairly filling (enough to get me through at least 4 hours without my stomach growling), easy to make or heat up in the morning, and portable because I eat on my drive. For a long time I ate refrigerator oatmeal which really is delicious and perfect for my requirements, but I ran into a big problem with it once I got pregnant and that is that I can no longer tolerate very much dairy! Refrigerator oatmeal calls for milk AND Greek yogurt which is just too much.

    So then I tried making ahead breakfast sandwiches and freezing them, but they just didn’t taste great heated up. I am not above buying prepared foods, but since I tend to eat the same thing every day for breakfast I really wanted to find something that was less processed and cheaper in the long run. For awhile I went back to eating regular oatmeal prepared with water, but it was very blah.

    Then I remembered a recipe for baked oatmeal my best friend Becca gave me a long time ago! I had made it in the past and loved it but just forgot about it for awhile. I just substituted almond milk for regular milk and it came out perfectly.

    Here’s what you do:

    Preheat the oven to 350 degrees.

    Mix up the dry ingredients in one bowl:
    2 cups rolled oats
    1/3 cup brown sugar
    1 teaspoon baking powder
    1 Tablespoon cinnamon
    1/3 cup raisins or other dried fruit (I usually use cranberries)
    3 Tablespoons chopped walnuts (optional – I’ve never used them)

    Then mix up the wet ingredients in another bowl:
    1 cup milk (or almond milk)
    1/2 cup applesauce
    2 Tablespoons oil
    1 egg, beaten

    Combine the two and stir well. Pour it all into a greased 8×8 pan and bake for 25 minutes.

    Also, I double the recipe and bake it in a 13×9 pan which yields the amount you see in these photos. It requires a few extra minutes of baking, but your oven may be a little different. It’s so good! Just the right amount of sweet.

  • on being a nurse

    I had an opportunity to write a post about nursing – which, if you don’t know, is what I do for a day job – and although at first I wasn’t sure because I don’t tend to write much about work in this space, the more I thought about it the more I wanted to say something about how special it is to me. Because even though lately we are all holiday-focused and I’m naturally also very family-and-pregnancy-focused, the reality is that work takes up the biggest part of my life, and I’m very blessed and grateful to be doing something I love and feel is a calling and a ministry.

    In church recently our pastor challenged us to figure out who our hearts break for, and to do something about it; to come alongside them and share their burdens. Well, my heart breaks for a lot of people, but especially those I see every day: men, women, and families struggling with cancer. I became a nurse in the first place because I was working at a cancer clinic and it looked challenging and satisfying. I thought I would enjoy it and be good at it. I continued in the field of oncology kind of by accident, because it was the first job offered to me at a great hospital and I couldn’t say no, but I immediately fell in love with the patients and haven’t looked back.

    When you work in this area you really get to know well the people you care for, because it’s a long haul deal. It didn’t take long before I knew I wanted to keep doing it, and so I got certified and transferred to the outpatient center where we give chemo all day every day and work closely with the doctors’ offices to coordinate care. That also means that now I get to be with patients from the very beginning of their journey, and I get a lot more follow-up with them too. Even for patients who are doing well, the experience of being diagnosed with and treated for cancer is scary and can be difficult to get through. I think pretty much everyone has been touched by cancer in some way and I feel happy to be helping even a little bit. I consider my job a ministry because it is when people are broken and vulnerable that they need the most help. I want to be someone who comes alongside them and shares that burden.

    In our clinic we have a bell-ringing ceremony for anyone completing their course of chemo. We nurses live for those celebrations, but we are also not afraid to cry with someone. I’m proud to do what I do, but I also feel so blessed to be able to do it. I think my patients have done so much more for me to make me a better person than what I’ve done for them.   • quick takes

    1. Meredith has suddenly developed a stutter. It is very pronounced and not particularly cute. We are calm about it and know that it’s probably just developmental. I tell her to think about what she’s trying to say and rarely finish her words for her. We’ll see how it goes.

    2. She is not potty training yet, but there are signs of readiness coming. I don’t think I’m going to attempt anything for awhile though, except get her some underwear for her stocking. Also, for now I’ve switched her over to disposable diapers. I love cloth and I’m going to cloth diaper the next baby, but this is a relief for now. Meredith kept getting a rash, and I realized that her diapers probably have detergent buildup and need to be stripped. I don’t have time or energy for that right now. The velcro is also really worn out and fixing it involves seam ripping and sewing and I don’t have time or energy for that right now either. I have to say that I’m not complaining about the lack of laundry during the week. And she fits into so many more pants now!

    3. We were given a classic chocolate Advent calendar for Meredith, so every night I tell her that she can have her special chocolate and try to explain how we’re counting down toward Christmas. It’s fun, except so far she has thrown a fit every night when she is only allowed one piece. So, not sure if this is worth it.

    4. Then there’s this.

    5. We might have a name for baby brother. I don’t know for sure yet though. David is set on it but we have changed our minds a bunch of times already so I’m not prepared to say that we’ve decided. I’m also wavering between two middle name options. Other pregnancy updates include: heartburn like whoa, nausea again, being kicked like crazy. But seriously with the heartburn: I’m over it. This kid better have a head full of luscious hair.

    6. Stocking update!

    I can’t wait to finish this. I’ll be so proud. It’s so close! Just a couple more boxes to add, some detail at the top, and then putting it together.

    7. Weekend plans: do chores, hang out with my family, finish decorating for Christmas, go to Ikea for the extra curtain rod & hardware we need, do at least one spread of Project Life (preferably two), maybe some gift shopping, Messiah singalong with Mom, work on the stocking. Fun!

    8. Last thing: just a heads-up that in the next couple of weeks I’ll have a few sponsored posts going up about things that I don’t normally write about here, but they are nevertheless things that I do feel strongly about so please bear with me!

  • november goals update

    November goals were hit and miss, but I did make progress!

    1. Prep holiday minibook – Well I didn’t end up having to do much prep since I ordered one premade, but it’s ready to go!

    2. Photo a day – Totally failed on this one. I don’t think I’m ever going to attempt another photo a day because I haven’t completed one yet.

    3. Document a day in the life – I did this on Instagram and will place it as an insert in my Project Life.

    4. Address the dresser situation – This goal is more than halfway done! We got a new dresser for our bedroom for free from a friend of my mom’s. It’s the perfect size and although it could use some refinishing in the future it is completely inoffensive and a big improvement from what we had. I will share pictures of the space as soon as I complete some more improvements. So we moved our (now) old dresser into the guest room, but I haven’t moved any baby stuff into it yet. I think going through all the baby stuff will wait until after Christmas.

    5. Install bedroom curtain rods & outlet covers – So my dad came over and did all the outlets and covers, and he did a curtain rod in our front room but I didn’t have the right supplies to do the bedroom because the rod wasn’t as long as I thought! So now I need to pick up a new one to get this done. Maybe next weekend.

    I’m getting really worn out already with this pregnancy and prepping for Christmas, so I’m not making any additional specific goals right now other than my holiday to-do list and pregnancy to-do list. I’m also not sure if I’ll be doing any goals for next year from the beginning since things are going to be changing so drastically for us, but I’ll be reevaluating as I go.
